Open Classes

We offer Cooking Classes open to the public on a variety of our favorite topics. Class size varies from 10 to 32 guests, and it’s a great place to cook with your friends and come to meet new ones. All our open classes are BYOB, so you can pair your meal with your favorite beverage.

Secondo Corso: Pasta Making

Time for the second course—of pasta making that is! Challenge yourself to new pasta techniques such as tortellini folds, and farfalle shapes in our follow-up, carnivore friendly, pasta class. Breeze through the dough making process and take on a couple of delicious sauces. The menu offers a turkey bolognese, and a light creamy lemon sauce. Relax after the cooking instruction and savor your hard-earned dinner with new friends and old.

Cooking Fool’s World Tour

Close your eyes, take a bite, and travel the world. It’s that simple. It’s rare for us to get the chance to fly off to the rivieras of Spain, or unwind on a beach in the Caribbean nowadays, but luckily we can still travel through taste. So take a trip with us and tour through different cultures, and across continents— all from the comfort of Chicago. Join us for a monthly dinner series featuring a four course meal from a different cuisine each month.

Please email us with dietary restrictions before booking this class. Meat, gluten and dairy will be included in our World Tour Series. We may not be able to substitute ingredients we consider vital to specific dishes.

Alternative Sauces 10 in All

We constantly receive questions from home cooks about how to make sauces to complement everyday meals. We all have experienced how a particular condiment or sauce can transform a good dish into a really great, memorable one. But let’s face it, classic butter and cream based sauces popular on restaurant menus are great indulgences, but are not appropriate for regular, everyday healthy dining. 

Come join us in a hands-on treatment of alternatives to traditional sauces. Experience the fresh, clean taste of pestos, relishes, salsas, chutneys and vegetable coulees, all made without high saturated fats. Our focus will be on items that can be made quickly at home to complement simply prepared meats, fish and poultry, as well as their use in vegetarian dishes.

Tamale Making

Learn how to prepare traditional tamale masa, make both chicken and vegetarian fillings, and fill a dozen tamales exactly how you like them. Once the tamales are in the steamer, you will prepare three styles of salsas that will quickly find their way into your kitchen repertoire. You will also learn the secret to making the perfect Mexican style rice and the meal will be rounded out with a crisp green salad alongside a cilantro citrus vinaigrette. You will make plenty of tamales to take home and enjoy after the class as well.

Pizza Workshop

In Chicago, pizza is always a topic of conversation. Whether one likes a thin or thick crust, sausage or pepperoni, white or red sauce, can say a lot about a person. Join us for an interactive pizza making class where we’ll show you traditional kneading methods, the making of two types of crusts, and several sauces. Ponder the different sauce and topping combinations before making two of your own pizzas. Enjoy your customized creations with the group over a casual dinner following the cooking instruction.

International Dumplings

Tibetan Momos, Chinese Shumai, Pot Stickers and Har Gow, Italian Gnocchi, Japanese Gyoza, American sweet and savory dumplings, Polish Perogis and Indian Samosas are a few of the variations of those delightful pieces of dough we call dumplings. Cultures from all over the world have been flavoring and wrapping foods in dough for thousands of years. Come join us to explore how this inexpensive, satisfying modular food can be used for simple meals as well as entertaining your friends. Menu Items may include Mexican Chicken Empanadas with Salsa Rojo, Indian Samosas with Mint and Cilantro Chutney, Chinese Shumai with Spicy Soy Dipping Sauce, and Traditional Chinese Potstickers.

Knife Skills

Do you cringe when you see a cleaver? Wish your Wusthof worked on its own? You’re not alone! This class will help you do away with your knife anxieties and teach you the basics of cutting and chopping. Here you’ll learn the parts of a knife, purposes for common knives, and basic knife cuts to improve your speed and precision when cooking at home. At the end of the class your hard work will pay off with a delicious meal, centered around a pasta dish made with the vegetables you’ll have cut, and finished with goat cheese and fresh basil.

Sushi for Lovers

An evening with fresh raw fish can be more romantic and fun than you think.  Come join us and learn the basics of hand made sushi. In the first part of this event, you will receive hands-on instruction for both maki and nigiri sushi, before putting your newly acquired skills to use and creating a delicious spread  to enjoy with your partner. After the cooking session, you will sit down to a delicious candlelit dinner, featuring the fruits of your labor and some special treats prepared by your Chef instructors.  This class also includes an open bar of wine,  Japanese beer and soft drinks. This class is limited to 12 couples and sells out quickly, so don’t wait too long.

Details

To offer our classes, we need a minimum number of guests to sign up for each one. Sign up early, to help ensure the class will be taught as scheduled. All classes must be paid for in advance. Cancellations must be made at least seven days prior to the class to receive credit towards a future class, no exceptions.

Cancellation Policy

Your registration is a commitment to attend the class. Class fees are non-refundable. Any changes must be made at least seven days prior to the class for a transfer to another available class. If you are unable to meet the cancellation deadline, you are welcome to send someone else in your place. Please be sure they have your reservation number.
